Peanut Butter Banana Cups



-3/4 cup of dark chocolate chips

-1 banana, peeled and sliced into 12 pieces

-1/4 cup of creamy peanut butter

-1 tablespoon of melted coconut oil

-12 mini baking cups


-Place a sheet of wax or parchment paper on your counter top. Set the baking cups out on top of it.

-Melt chocolate in a small saucepan over low heat. Melt your coconut oil and peanut butter together in a separate saucepan at this time as well. Let the chocolate cool slightly.

-Add 1 teaspoon of melted chocolate to each mini baking cup, followed by one banana slice, 1 teaspoon of the melted peanut butter mixture, and then cover with 1 tablespoon of melted chocolate. Continue this until all of your mini baking cups are full.

-Cover and place in the freezer for at least 1 hour.

**These thaw quickly and can get messy if they are thawed out for too long, but they are so yummy!**
