Instant Pot Chicken Taquitos

{Ingredients}

  • 3 cups of shredded chicken {YOU CAN MAKE THIS AHEAD OF TIME IN BATCHES IN YOUR INSTANT POT SO IT’S ONE LESS THING YOU HAVE TO DO!} {Recipe is on my site}
  • 1/3 cup of homemade taco seasoning {recipe below}

  • 6 oz. of cream cheese (cubed)
  • 1/4 cup of water
  • 1 1/2 cups of shredded mexican cheese
  • 10-12 taco-sized flour tortillas

{Directions}

  • Place frozen chicken into instant pot. Put cubed cream cheese on top of chicken.
  • Mix the taco seasoning and water together and pour over everything.
  • Set instant pot for 10 minutes on manual. Once your time is up slide the top to “venting.” Set your oven to 400 degrees.
  • Open the top once the steam is released and mix 1 cup of shredded mexican cheese with the chicken.
  • Scoop the chicken mixture into the tortillas and top with more shredded cheese. Roll the tortillas and put a toothpick through the middle to keep them from opening while in the oven.
  • Cook for 6-7 minutes until golden brown.
