Broccoli And Cheese Soup



-1/4 cup of melted butter

-1/4 cup of flour

-2 cups of half and half cream

-2 cups of chicken stock

-2 cups of steamed broccoli

-1 cup of matchstick carrots

-1 3/4 cups of shredded sharp cheddar cheese

-1/2 to 1 tsp. of FINE sea salt

-1 tsp. of black pepper


-In a large pot whisk together the melted butter and flour over medium heat for 3-4 minutes.

-Slowly whisk in the half and half and the chicken stock. Let it simmer for about 20 minutes. Steam your broccoli in the microwave during this time.

-Add the broccoli and carrots. Let the soup simmer on low-medium for about 15 minutes.

-Add the salt, pepper, and sharp cheddar cheese. Mix until the cheese melts and then serve. We served ours in bread bowls.
