MEXICAN STUFFED SHELLS

*Ingredients*

-1 lb. of ground beef

-2 tbsp. of taco seasoning (I used my homemade one. You can find it on my blog.)

-4 oz. of cream cheese

-8 oz. of jumbo pasta shells

-10 oz. can of enchilada sauce

-1/2 cup of shredded mexican cheese

*Directions*

-Preheat oven to 350 degrees.

-Boil a large pot of water for your noodles. Cook noodles to your liking.

-Line a medium sized cooking pan with aluminum foil. Pour enough enchilada sauce to cover the bottom of the pan.

-Cook your hamburger until no longer pink. Drain grease and return hamburger to pan. Add in the taco seasoning and stir to combine. Add the cream cheese and enchilada sauce (leave enough in the can to drizzle over the shells.) Cook for another 5 minutes, stirring often.

-Scoop 1 to 2 tbsp. of the hamburger mix into each shell. Cover the shells with the shredded mexican cheese and drizzle the remaining enchilada sauce on top.

-Cook for 10 minutes in the oven.
