Coconut Chocolate Chip Cookies


-3/4 cup + 2 tbsp. of unsalted butter

-1 cup of granulated sugar

-1/2 cup of light brown sugar

-2 eggs

-1 tsp. of vanilla extract

-2 1/2 cups + 3 tbsp. of all-purpose flour

-1 tsp. of baking soda

-1/2 tsp. of salt

-1 cup of dark chocolate chips

-1 cup of chopped walnuts

-1 cup of shredded coconut


-Preheat oven to 350 degrees. Line a cookie sheet with aluminum foil (I also sprayed the aluminum foil with non-stick cooking spray.)

-In a large mixing bowl soften butter in the microwave for about 30 seconds, check at the 15 second mark.

-Once the butter is done, add both sugars and beat with a mixer until it’s fluffy.

-Add the vanilla and eggs and mix with your hand mixer. Add the flour, baking soda, and salt. Mix until everything is combined.

-Add the shredded coconut and once that’s mixed all the way in add the chopped walnuts and then the chocolate chips. You will probably have to mix the walnuts and chocolate chips by hand.

-Chill the dough in the fridge uncovered for 20 minutes. Scoop the dough into balls and push them down just a bit. Cook for 11 minutes. Put your cookie dough back in the fridge while the other half is cooking.

-When you’re ready to chow down add a scoop of vanilla ice cream to the top (or eat it by itself!)
