Vanilla Pound Cake



  • 3/4 cup of Smart Balance butter
  • 1 cup of granulated sugar
  • 3/4 cup of dairy free milk
  • 3 eggs
  • 1 1/2 tsp. of vanilla extract
  • 1 3/4 cups of unbleached all-purpose flour (sieved)
  • 1 tsp. of baking powder
  • 1/2 tsp. of fine sea salt
  • Skinny Truwhip {optional}
  • Strawberries {optional}


  • Heat oven to 300 degrees. Grease an 8×8 pan or you could use a bread pan {I just couldn’t find mine} Sieve your flour in a large bowl.
  • In a separate bowl mix your softened butter and sugar together with an electric mixer. Add the milk, eggs, and vanilla extract and continue to mix. Finally, add your flour, baking powder, and salt. Mix until everything is combined.
  • Pour it into your pan and put it into your oven and cook it for 45 minutes. Use a toothpick to make sure it’s done {make sure the toothpick comes out clean}

{I served mine with Skinny Truwhip and strawberries}
