Crockpot BBQ Pulled Pork

*Ingredients*

-4 lbs. of pork boneless shoulder butt roast

-2 tsp. of salt

-2 tsp. of pepper

-2 tsp. of garlic powder

-2 cups of sweet baby rays BBQ sauce

-1 package of sub rolls

-Butter

-Garlic powder

*Directions*

-Pour 1 cup of BBQ sauce into the bottom of the crockpot.

-Mix all of your seasonings together.

-Generously season the roast on both sides.

-Put the pork roast into your crockpot and cook on high for 4 hours. During the last hour shred your pork and add the remaining BBQ sauce and mix well.

-Preheat oven to 400 degrees. Put butter and garlic powder on your sub rolls.

-Cook for 5-6 minutes.

 

No Bake Oreo Peanut Butter Cup Cheesecake

*Ingredients*

-8 oz. of cream cheese

-1 cup of smooth peanut butter

-1 cup of light brown sugar

-10 Oreo cookies

-15 peanut butter cups

-1 1/2 cups of cool whip

-1 Oreo pie crust

*Directions*

-In a large mixing bowl mix together the cream cheese, peanut butter, and light brown sugar with an electric mixer.

-Place the Oreo cookies in a Ziploc bag. Place 10 of the peanut butter cups in a separate bag and crush them both.

-Pour half of the crumbled Oreos and all of the 10 crushed peanut butter cups into the bowl with the cream cheese mixture along with 1/2 a cup of the cool whip. Mix it all together.

-Pour the mixture into the Oreo pie crust and spread it out evenly.

-Crush the remaining 5 peanut butter cups.

-Spread the remaining cup of cool whip over the cream cheese mixture. Top the pie with the rest of crushed Oreos and the remaining peanut butter cups. Refrigerate for at least 2 hours before serving.

Lumpia

*Ingredients*

-1 tsp. of minced garlic

-1 lb. of ground beef

-1 cup of shredded carrots

-1 tbsp. of Bragg liquid aminos soy sauce alternative

-1 tsp. of fine sea salt

-1 tsp. of ground black pepper

-30 lumpia wrappers

*Directions*

-Cook garlic until fragrant and then add your ground beef.

-Once your ground beef is cooked halfway through add your carrots, liquid aminos, salt, and pepper.

-Strain your ground beef mixture once it’s cooked thoroughly.

-Put 1 in. of oil in your pan to fry the lumpia in and cook over medium/high heat.

-Add a spoonful of the mixture to each lumpia wrapper.

-Roll the wrapper (you can find directions online if you’re not sure how to do it) and cook until golden brown.

Crockpot Salisbury Steak

*Hamburger Patty Ingredients*

-1 lb. of ground beef

-1/3 cup of plain Panko breadcrumbs

-2 tsp. of ketchup

-1 tsp. of worcestershire sauce

-1/2 tsp. of garlic powder

-1/2 tsp. of onion powder

*Gravy Ingredients* (There’s a different gravy mix below if you don’t want to use this one)

-1/2 to 3/4 cup of sliced white mushrooms (optional)

-1 1/2 cups of beef broth

-1 oz. package of dry brown gravy mix

-2 tbsp. of ketchup

-3 tbsp. of cornstarch mixed with 4 tbsp. of water (more as needed to thicken gravy)

*DIFFERENT GRAVY MIX*

-2 packets of dry brown gravy mix

-2 cups of hot water

-1 tsp. of ketchup

-1/2 tsp. of worcestershire sauce

*Directions*

-Combine patty ingredients and mold hamburger into thin patties.

-Brown patties on both sides in a pan over medium heat.

-Combine all ingredients for gravy and pour them into your crockpot and then add the patties to the crockpot.

-Cook for 3 hours on high.

-Serve over rice, egg noodles, or mashed potatoes.

 

Instant Pot Chicken Pot Pie Casserole

*Ingredients*

-Rotisserie chicken or 4 boneless skinless chicken breads {shredded}

-2.5 cups of whole wheat egg noodles

-2.5 cups of frozen mixed vegetables

-6 cups of low-sodium chicken broth

-1 tsp. of garlic powder

-1 tsp. of onion powder

-1 tsp. of fine sea salt

-1 tsp. of ground black pepper

-2 cups of 2% Lactaid

-6 tbsp. of cornstarch

*Directions*

-Take the skin off of your rotisserie chicken and then tear the chicken into bite sized pieces. Mix your spices together. Add the chicken, noodles, vegetables, spices, and chicken broth to your instant pot.

-Cook on manual for 5 minutes and then do a quick release.

-Mix your milk and your cornstarch together. Put your instant pot on saute and add the milk mixture to it. Stir and continue to cook until the sauce thickens up.

Chocolate Zucchini Brownies

*Ingredients*

-2 cups of unbleached all-purpose flour

-1/2 cup of cocoa powder

-1 1/ 2 tsp. of baking soda

-1 tsp. of fine sea salt

-1/2 cup of vegetable oil or coconut cooking oil

-1 1/2 cups of sugar

-2 tsp. of vanilla extract

-2 cups of shredded zucchini

-2-4 tbsp. of water

-1 cup of chopped walnuts

**Icing Ingredients**

-3 tbsp. of cocoa powder

-1/4 cup of butter, melted

-2 cups of powdered sugar

-1/4 cup of milk

-1 tbsp. of vanilla extract

*Directions*

-Preheat oven to 350 degrees. Spray a 9×13 pan with non-stick cooking spray.

-In a medium bowl, whisk together flour, cocoa, baking soda, and salt. Set aside.

-In another bowl, mix together the oil, sugar, and vanilla. Add your dry ingredients to your wet ingredients. Add your zucchini and mix until everything is combined. Stir in your walnuts.

-If your batter is not watery from the zucchini then you can add 2 to 4 tbsp. of water.

-Bake for 20 minutes.

-Once your toothpick comes out clean let your brownies cool and make your icing.

Spaghetti Sauce

*Ingredients*

-1 lb. of ground beef

-1 lb. of ground Italian sausage

-2 tsp. of minced garlic

-28 oz. can of diced tomatoes in tomato juice (I put mine through my food processor because I don’t like tomato chunks in my sauce)

-15 oz. can of tomato sauce

-6 oz. can of tomato paste

-2 tbsp. of sugar

-2 tsp. of Italian seasoning

-1 tsp. of ground black pepper

-1 tsp. of fine sea salt

*Directions*

-Cook sausage and hamburger until no longer pink and strain the grease.

-Return meat to pan and add minced garlic and cook for 2-3  minutes.

-Add remaining ingredients to your pan and mix until everything is combined.

-Cook for 30-45 minutes.

 

Vegetable Beef Soup

*Ingredients*

-1 lb. of hamburger

-4.5 cups of chopped red potatoes

-24 oz. of frozen mixed vegetables

-32 oz. of beef broth

-2 (10.75 oz.) cans of tomato soup

-1 tsp. of garlic powder

-1 tsp. of ground pepper

-6 tbsp. of cornstarch

-6 tbsp. of water

*Directions*

-Cook hamburger until no longer pink and strain grease.

-Put everything except for your cornstarch and water into the crockpot and mix everything up.

-Cook on high for 4 hours. At your 2 hour mark mix your cornstarch and water together and pour it into your crockpot. Mix until everything is combined.
