Chocolate Chip Muffins



-2 1/2 cups of unbleached all-purpose flour

-1 tbsp. of baking powder

-1 tsp. of baking soda

-1/2 tsp. of salt

-1/2 cup of unsalted butter, melted and cooled

-1 cup of granulated sugar

-2 large eggs

-1 cup of milk

-1 tbsp. of vanilla extract

-1 cup of dark chocolate chips

-1/4 to 1/2 cup of mini chocolate chips


-Preheat oven to 375 degrees. Line a muffin tin with liners.

-In a large bowl mix together the flour, baking soda, salt, and sugar.

-In a separate bowl mix together butter, eggs, milk, and vanilla extract.

-Add wet ingredients to dry ingredients and mix well. Fold in the dark chocolate chips only.

-Pour batter into liners and top with mini chocolate chips. Cook for 10-15 minutes. They will be done when a toothpick comes out clean. Let cool for 10 minutes.
