Reverse Seared NY Strip Steaks


Yesterday was my first time using our Traeger grill and color me impressed! These were the best steaks I’ve ever had in my life. Even though they cooked for over an hour they were the JUICIEST steaks I’ve ever had. We cooked four, but unless you’re feeding a small army or 8+ adults I would highly recommend only cooking two. For our family of two adults and two growing boys two steaks would have definitely been enough!


-1 1/2 in. thick boneless NY strip steaks {x2}

{If you get anything thinner I’m afraid it might dry out}

-Traeger beef rub

-2 to 4 tbsp. butter

-Hickey smoked wood pellets


-When ready to cook start your Traeger grill on smoke with the lid open until fire is established {5 minutes.} Set the temperature to 225 degrees and preheat with the lid closed for 15 minutes.

-While the grill is coming up to temperature, season the steaks with the Traeger Beef rub.

-Place the steaks in the grill and smoke for 60 minutes. Remove steaks from the grill and set on the counter to rest.

-Increase the grill temperature to 450 degrees and let it come up to temperature with the lid closed for 10 minutes.

-Return steaks to the grill and sear for 8 minutes. Flip the steaks and add 1-2 tbsp butter to each steak.

-Sear for another 8 minutes.

We paired ours with green beans 🙂
