Cinnamon Strawberry Crumble Bars

Next time I’m going to try to make homemade cherry jam and use that in place of the strawberry.

  • 1 cup + 1 tbsp. of unbleached all-purpose flour
  • 3/4 cup of old-fashioned rolled oats
  • 1/4 cup of Swerve granulated sugar replacement
  • 1/4 cup of light brown sugar
  • 1/2 cup to 3/4 cup of Smart Balance butter {melted}{start with a 1/2 cup}
  • 1 tsp. of vanilla extract
  • 1 cup of strawberry jam or preserves
  • Ground cinnamon

  • Preheat oven to 175 degrees. Line a 5 x 9 in. pan with aluminum foil.
  • In a mixing bowl combine flour, rolled oats, and both sugars.
  • Add in the melted butter and vanilla extract. Mix until everything is combined.
  • Spread a layer out in your pan, add your jam, and add the top layer. {You may have a little less for your top layer!} Sprinkle cinnamon on top.
  • Cook for 45 minutes.
  • Let cool on the counter for 1 1/2 hours before cutting it or it might fall apart.
  • {You can always put it in your fridge to speed up the process, but let the pan cool down before you do that.}
  • Store in your refrigerator.
