Happy Mother’s Day

{To all of you} Including the mother’s who have babies in heaven. The ones that never got to hold their babies and touch their sweet faces. Going through the IVF process for surrogacy I witnessed a lot around me and a lot through my friends. You are all still mothers. & To the moms who are raising kids through adoption or foster care. This is still your day ♥️

Cosmic Brownies

{Ingredients}

  • 1/2 cup of melted butter
  • 1/2 cup of white sugar (I used Swerve granular sugar replacement, but you can use regular sugar as well)
  • 1/2 cup of brown sugar
  • 2 eggs
  • 1/4 to 1/2 cup of unsweetened applesauce
  • 1 tsp. of vanilla
  • 1/2 cup of unsweetened cocoa powder
  • 1/2 cup of unbleached all-purpose flour
  • 1/4 tsp. of sea salt
  • 1/4 tsp. of baking powder

(FROSTING INGREDIENTS)

  • 2 tbsp. of melted butter
  • 3 tbsp. of unsweetened cocoa powder
  • 1 tbsp. of honey
  • 1 tsp. of vanilla
  • 2 tbsp. of dairy free milk
  • 1 cup of powdered sugar
  • Rainbow sprinkles
  • Rainbow chip crunch sprinkles {I had to buy mine online}

(Directions)

  • Preheat oven to 350 degrees. Spray an 8×8 in. pan with non-stick cooking spray.
  • Add all brownie batter mix ingredients to a large mixing bowl. {I used my Kitchenaid mixer.} Mix well until everything is combined.
  • Pour your mixture into your pan {& lick the spoon} and cook the brownies for 13-15 minutes.
  • Allow them to cool for 20 minutes before you frost them. While they are cooling make your frosting. Mix all of your frosting ingredients together until everything is combined. Put the frosting on your brownies and add both sets of sprinkles immediately after.
