Instant Pot Ranch Chicken Pasta

  • 1 lb. of boneless skinless chicken breasts {cut into bite-sized pieces}
  • 2 tbsp. of avocado oil
  • 1 package {1 oz.} of dry Original Ranch dressing mix
  • 1/4 cup of chopped cooked bacon {I used Applewood smoked}
  • 8 oz. of cream cheese {cut into 8 pieces}
  • 1 lb. of dry Penne pasta
  • 3 cups of low-sodium chicken broth
  • 2 cups of water
  • 1/2 cup of shredded cheddar cheese
  • Ground black pepper {optional}

  • Cut up your chicken and put it into a bowl. Add your oil and ranch dressing powder and mix well.
  • Put your instant pot on the “saute” setting. Cook chicken for 2-3 minutes {keep an eye on it because it can burn quickly & continue to stir so it doesn’t stick to the bottom of the pot}
  • Add your cream cheese, pasta, broth, and water to your instant pot.
  • Close the lid to lock your pot and select the “manual” setting.
  • Cook pasta for 7 minutes. Once your time is up do a quick release for the steam.
  • Cook your bacon while your pasta is cooking.
  • Open lid and add 1/2 cup of cheese and mix until it has melted. Top with bacon and ground black pepper {optional}.
