Dairy Free Peanut Butter Cups

{Ingredients}

-3/4 cup of dairy free dark chocolate chips {I use Enjoy Life}

-1/2 cup of creamy natural peanut butter

-1/4 cup of Swerve confectioners sugar

-1/2 tsp. of vanilla extract

-1 tbsp. of coconut oil

-4 cupcake liners

{Directions}

-Combine the peanut butter and Swerve confectioners sugar in a bowl and mix well.

-In a separate bowl melt the chocolate chips, vanilla extract, and coconut oil in the microwave for 30 seconds. Continue to cook at 15 second increments until everything is melted.

-Scoop a spoonful of the chocolate mixture into a cupcake liner, add a spoonful of the peanut butter mixture, and add another scoop of the chocolate mixture.

-Put them in the freezer to chill for 1 1/2 to 2 hours. Store in the freezer.

-This makes 4 large peanut butter cups.
