Rocky Road Peanut Clusters


•2 cups of dairy free chocolate chips

•1 tbsp. of coconut cooking oil

•1 1/2 cups of unsalted peanuts

•1 1/2 cups of mini marshmallows


•Line a baking sheet with waxed paper.

•Melt chocolate chips with coconut cooking oil in a pan or in the microwave. If you melt it in the microwave make sure to check it every 30 seconds. If you cook it on the stove then make sure to stir it constantly or it’ll burn.

•Once your chocolate has melted, quickly stir in the peanuts and marshmallows. Scoop spoonfuls of the mixture onto your waxed paper.

•Put them in your freezer for 20 minutes to harden.

•Store them in an airtight container in the fridge.
