Dairy-Free Peanut Butter Bars

I made these dairy free peanut butter bars over the weekend and I am OBSESSED with them.

Ingredients:

1 ½ cups all-natural creamy peanut butter

½ cup raw honey

2 tsp. pure vanilla extract

2 large eggs

½ tsp. baking soda

⅓ cup dairy free mini chocolate chips

⅓ cup unsweetened shredded coconut flakes

Directions:

Preheat oven to 350 degrees.

Use an 8×8 silicone cooking pan or lightly grease a normal pan.

Combine everything into a bowl, mix well.

Spread batter evenly in your pan.

Bake for 25 minutes and let cool for an hour.

They will be gooey when they’re done, so don’t panic thinking that they aren’t ready.

Store your leftovers in the fridge for up to a week.

When I grab one out of the fridge I always warm it up for 15 – 30 seconds in the microwave, but you can eat yours however you’d like!

Beef Stroganoff

How do you feel about beef stroganoff? ⠀

My kids devour it! ⠀

✨ Ingredients ✨⠀

• 4 1/2 cups of egg noodles⠀

• 1 lb. of ground beef⠀

• 2 cups of low-sodium beef broth⠀

• 2 cups of dairy free 2% Lactaid⠀

• 2-3 tsp. of beef bouillon granules ⠀

• 2-3 tsp. of Worcestershire sauce⠀

• 2 tbsp. of unbleached all-purpose flour⠀

• 1/4 tsp. of ground pepper⠀

✨ Directions ✨⠀

• Cook noodles as you normally would.⠀

• In a large pan over medium heat cook ground beef until it’s no longer pink.⠀

• Strain grease from the ground beef. Do not return it to your pan yet. ⠀

• Add beef broth, 1 1/2 cups of milk, bouillon granules, Worcestershire sauce, and pepper to your pan. In a separate bowl whisk together the remaining milk and the flour, add to your pan. Cook over medium to medium/high heat for 10 minutes.⠀

• Return hamburger to the pan and continue cooking for another 5-10 minutes.⠀

• Mix the noodles into the sauce and remove the pan from the heat. Let cool for 10 minutes so the sauce can thicken.⠀

Serve with a salad or French bread 🥗 🥖

Air Fryer Sausage & Potatoes

{Ingredients}

• 1 lb of kielbasa sausage

• 3 cups of russet potatoes

• 3 cups of fresh green beans

• 1/4 tbsp of McCormick salt-free garlic & herb seasoning 

• Avocado oil spray

{Directions}

• Cut your sausage and potatoes into bite-sized pieces.

• Put sausage, potatoes, and green beans, into a large mixing bowl. Spray them with a small amount of your avocado oil.

• Add seasoning to your bowl. Mix it up until everything is covered with seasoning.

• Cook at 400 degrees for 10 minutes. Mix everything up and cook for an additional 5 minutes.
